There are many ways to replicate the effects of 'fireworks' (and they wouldn't be called 'fireworks' because the 'fire' that makes them work would not be so much a big part of the display).

As mentioned, mages can replicate light shows in the air simply enough, but yes for higher ranked mages it would be seen as rather demeaning... simple light shows are the work of apprentice/journeymen, simple illusion work and nothing more.  Some higher ranked mages might find some enjoyment making incredibly complex skyshows, however, the way a sailor finds it enjoying to cram a ship model into a bottle.

Then there is the dragonsand, which I would like to not be so common that it can be used for anything less than a Royal Wedding or the like, or the defense of the castle (consider that the 'dragonsand' mentioned in the Winter Assault was a catapult shot, not as the propulsive force of a canon).

And then there's good old coal dust.  Caused to airburst after being launched by a catapult, or trailed behind a flying dragon, it can be made to burn as effectively as conventional gunpowder.  Mixed with rare-earths like manganeze, magnezium, iron/zink/copper oxides... can produce very colorful fiery streamers.  The only limit to coal dust is the lack of a kicker charge to disperse it prior to ignition.

There are many analogues that can be used to make a light show in the sky.  One of the earliest limits of Metamor was 'no gunpowder' and it's been that way since its inception, I would prefer not to set that aside.  The advention of gunpowder would lead to the introduction of those things that gunpowder allows (and this would happen in months, as another writer saw gunpowder but no guns... and sought to introduce them).
